Kniv & Vin: vintage knives, food and wine in the evening

Kniv & Vin (Knife & Wine) is our evening pop-up shop. We bring our suitcases of vintage knives, second hand knives and specials to a bar or restaurant, and you can look at the knives, hold them and buy them while the venue serves food and drink. So far we have been at TempoTempo in Bergen.
Knives, food and drink
Vintage here means old knives that have never been used, and second hand means used knives. Both are also part of Saisei, our own series. The knives lie in their own boxes on Japanese newspaper, each box with a numbered note, and you can pick them up and feel them. Ask about steel, shape and care, and we answer while you are standing there.
The sign says it briefly: «Vintage kniver, snacks og vin» (vintage knives, snacks and wine). The venue takes care of the food and drink. We are open from 18:00 until 23:00 or 01:00, so you can eat and look at knives in one go.
From Knivsjappa at Bakklandet
In the summer of 2025 we had a pop-up shop at Bakklandet in Trondheim. We called it Knivsjappa (the knife shop), a small shop where you could drop in, look at knives and have a chat. We missed it. Kniv & Vin is the same thing, only in the evening and with food and drink. The story is in Knivsjappa at Bakklandet.
The weekend in the loft at TempoTempo
TempoTempo is a bar at Domkirkegaten 6A in Bergen. The first time we set up Kniv & Vin there was on a Friday and a Saturday this summer, Friday from 18:00 to 23:00 and Saturday from 18:00 to 01:00. TempoTempo wrote that we were bringing vintage knives, and asked people to drop by and pick up a new knife or two.
We were up in the loft, and afterwards we called it the most «illegal» knife shop we have ever had. When the weekend was over, the suitcases were almost empty. Thank you to everyone who came by and stayed with us.
The food festival in Bergen
For Matfestivalen, the food festival in Bergen, on 3–5 September, we packed the suitcase again and went back to TempoTempo. We were open Thursday 18:00–23:00, Friday 18:00–23:00 and Saturday 18:00–01:00.
After the evening
A knife has somewhere to go after you buy it. If you buy a knife at Kniv & Vin, the workshop sharpens it at the regular price for as long as you own it, in the shop at Teknostallen or by post. Sharpening costs from NOK 149 per knife. See the workshop page.
Kniv & Vin at your place
You have the venue, the food and the drink. We bring the suitcases and the knives. What else we do for companies is under business.
When there is no pop-up
In the shop at Teknostallen you can buy a used knife as it arrived from Japan, and restore it yourself. The address and opening hours are on Find us.
