The name means 'muscle puller', and most are 240 to 270 mm. Because it is double-bevel, it suits both right- and left-handed users, and it is sharpened like an ordinary kitchen knife. For sashimi you use a single-bevel yanagiba, but for steak, salmon and thin slices of most things the sujihiki is more practical.
