Flattening stones
A whetstone wears hollow in the middle with use, and a hollow stone sharpens unevenly. The flattening stone makes it flat again.

We recommend doing it often, ideally after every sharpening. Then it takes a few seconds, instead of a long job once the stone has become uneven.
