With use, the blade develops a patina, a blue, black or brown layer that protects the steel. Rust is orange, and you remove it straight away. Acidic foods such as citrus, tomato and onion speed it up, so give the blade a wipe with a cloth as you go. The most common steels here are Shirogami and Aogami. Some knives have a carbon steel core clad in stainless steel, so only the edge can rust.
