Shibata

The story
Takayuki Shibata is a well-known Japanese knife maker and master sharpener, known for his work with Masakage Knives, a brand with international recognition among professional chefs and home cooks. Shibata has worked with several skilled smiths across Japan and has developed his own sharpening method that gives his blades sharpness, precision and long edge retention. His knives are particularly valued for vegetables and raw fish, but work just as well for general kitchen use.
Shibata also developed the popular Koutetsu series, which combines good steel with ergonomic handles and a balanced design, and gives professional chefs a reliable tool for demanding jobs. His approach is clear: the knives must first of all work, not just look good. This shows in his motto, 'Art over Beauty', where function and precision come before looks, and each blade is the result of careful work and experimentation.
Takayuki Shibata's knives combine tradition, new ideas and practical kitchen use. They are tools that carry Japanese craft tradition, made to give precision, reliability and pleasure in cooking.
