Yoshimi Kato

Yoshimi Kato forges at Takefu Knife Village, where in 2017 he took over the forge from his father-in-law Hiroshi Kato, one of the founders of the knife village. Kato is particularly known for his heat treatment, which gets the most out of steels such as Aogami Super and SG2. His blades are thin and light, with an edge that stays sharp for a long time. The SG2 Minamo series, with its rippling Damascus pattern, is much sought after.

The story

Yoshimi Kato knives come from Takefu Knife Village in Fukui, a region with several hundred years of smithing tradition. Yoshimi Kato (加藤 義実) is a respected modern knife maker in Japan, known for his precise heat treatment and for combining traditional techniques with modern steels.

The idea behind Yoshimi Kato knives is working tools where balance, cutting and looks go hand in hand. Each blade shows careful handwork, often with Damascus patterns and well-thought-out details. The knives are valued by professional chefs and dedicated enthusiasts.
