Description

A precise vegetable knife forged in Blue #2 carbon steel with a rustic kurouchi finish. The tall, straight blade gives quick, clean cuts through vegetables, and the steel takes a very sharp edge. As with all carbon steel, dry the knife well after use.

About the knife type: Nakiri (vegetable knife)

A nakiri is a vegetable knife with a short, straight, wide blade and no tip. It gives fine, even cuts when you chop, slice and julienne.

A nakiri is not a cleaver. Do not chop through bone or frozen food.

About the steel: Blue #2 (Aogami #2)

Offers a balance between sharpness, durability and ease of sharpening. Versatile and common among professional chefs. Clean and dry straight after use; avoid long exposure to moisture. Develops a protective patina over time that reduces the risk of rust and gives the blade its own look.
