Description

Small bunka (ko-bunka) of 135 mm from HADO in Sakai, sold as HADO Factory Seconds. The knife is new from the forge, with a cosmetic flaw. Ask us about the flaw on this particular knife.

Bunka has a pointed, angled tip that is good for fine work. The core is Shirogami 1 (White #1), a carbon steel, with stainless cladding and a polished migaki finish. The handle is Japanese (wa) in magnolia wood with buffalo horn, and the edge is sharpened 50/50.

With stainless cladding, it is the edge that needs care: wash and dry the knife straight after use. We sharpen it in the workshop when it needs it.

HADO

HADO was started in 2019 by Fukui Co. in Sakai. The team is six craftsmen who do almost everything themselves: sharpening, polishing and fitting handles, with blades forged by Sakai smiths such as Yoshikazu Tanaka and Shogo Yamatsuka.

About the knife type: Bunka (chef's knife)

A bunka is similar to a santoku, but has a sharper, angled tip. It chops vegetables, slices meat and fillets fish.

The tip is good for fine work, but can break more easily, so the knife needs more experience and precision.

About the steel: White #1 (Shirogami #1)

A high-carbon steel known for taking a very sharp edge and being easy to sharpen. Clean and dry straight after use; avoid long exposure to moisture. Over time the steel develops a natural patina that improves rust resistance and gives the blade character.

Care and maintenance

Wash by hand in warm water, and dry it straight away.

Never the dishwasher. Use a cutting board of wood or plastic, not glass or stone.
