Description

HADO Junpaku Bunka 180 mm is a high-quality Japanese kitchen knife, hand-forged in Sakai, Japan. The blade is made of Shirogami #1 steel (White #1), known for taking a very sharp edge. The polished migaki finish gives the knife an elegant, timeless look. The handle is oak with a traditional two-tone Japanese urushi lacquer: a matt natural lacquer on the top and bottom, and a high-gloss red lacquer on the sides. The combination gives a comfortable grip and a handsome look. The knife suits precise work and all-round use in the kitchen, which makes it a useful tool for both professional chefs and food enthusiasts

HADO

HADO was started in 2019 by Fukui Co. in Sakai. The team is six craftsmen who do almost everything themselves: sharpening, polishing and fitting handles, with blades forged by Sakai smiths such as Yoshikazu Tanaka and Shogo Yamatsuka.

About the knife type: Bunka (chef's knife)

A bunka is similar to a santoku, but has a sharper, angled tip. It chops vegetables, slices meat and fillets fish.

The tip is good for fine work, but can break more easily, so the knife needs more experience and precision.

About the steel: White #1 (Shirogami #1)

A high-carbon steel known for taking a very sharp edge and being easy to sharpen. Clean and dry straight after use; avoid long exposure to moisture. Over time the steel develops a natural patina that improves rust resistance and gives the blade character.
