Description

Small vegetable knife of 75 mm from Tosa in Kochi. It suits small jobs with vegetables, fruit and herbs, on the board or in the hand.

The core is Aogami 1 (Blue #1), a carbon steel, with iron cladding. The finish is kurouchi: the black forge scale is left on. The handle is Japanese (wa) in walnut, and the edge is sharpened 50/50.

Iron and carbon steel can rust. Dry the knife straight after use. We sharpen it in the workshop when it needs it.

About the knife type: Nakiri (vegetable knife)

A nakiri is a vegetable knife with a short, straight, wide blade and no tip. It gives fine, even cuts when you chop, slice and julienne.

A nakiri is not a cleaver. Do not chop through bone or frozen food.

About the steel: Blue #1 (Aogami #1)

A carbon steel with added chromium and tungsten, which gives greater wear resistance and hardness. Holds its edge longer than many other steels. Clean and dry straight after use; avoid long exposure to moisture. Over time the steel develops a protective patina that improves rust resistance and gives the blade character.
