Tosa Cutlery
Production is rooted in small and medium-sized workshops that work with classic methods and simple, honest materials. The result is knives and whetstones made for daily use, with the weight on precision, control and reliable performance.
Tosa Cutlery is Japanese craft in its most practical form: tools made to be used, maintained and improved over time.

The story
Knife making in the Tosa region of Japan goes back several hundred years. The craft grew out of smithing traditions tied to farming and forestry, where tools had to be robust, precise and reliable. After the Edo period this knowledge was gradually carried over to kitchen and household knives. Many of the workshops in the region are still family businesses, where techniques, knowledge of materials and approach to the craft pass from generation to generation.
Production at Tosa Cutlery relies on simple tools and traditional methods. A central technique is warikomi, where hard edge steel is combined with softer outer layers for both sharpness and good wear resistance. The knives are often finished without a mirror polish, which keeps the raw, handmade look and shows that these are tools made for use, not for display.
Today Tosa knife making is recognised as a protected regional craft tradition and counted as part of Japan's cultural heritage. The knives are exported internationally and valued by professional chefs and enthusiasts for their honest construction, practical design and clear character. The region's smiths also work with modern partners to adapt traditional craft to today's kitchens without giving up the basic principles.
