Craftsperson · Takefu, Fukui

Masutani

Masutani was born in 1944 in Takefu and learned the trade by watching his father from the age of 15. At 30 he opened his own forge. The knives are forged in the sanmai technique, a hard core steel with softer steel around it, and leave the workshop very sharp.
Masutani

The story

Masutani is a Japanese knife maker from Takefu who has spent his whole life on traditional craft. Inspired by his father, he started learning the trade early and opened his own forge at 30. Each Masutani knife is the result of decades of experience, careful work and a deep understanding of balance, sharpness and wear resistance.

The knives combine a hard core steel with softer outer layers in the classic 'Sanmai' technique, which gives long-lasting sharpness while the blade can take hard use. With the focus on precision, looks and function, Masutani knives are valued by professional chefs and food enthusiasts around the world. Each knife is a tool that carries Japanese tradition into the modern kitchen.
