Description
HADO Shiosai Kiritsuke Gyuto 210 mm is a Japanese kitchen knife known for combining traditional craft with modern materials. The blade is forged from SG2 powder steel, which gives very good sharpness and durability. The hammered tsuchime finish reduces how much food sticks to the blade, which makes cutting easier. The handle is made of stabilised wood, which looks good and resists moisture. With a blade length of 210 mm and a weight of 163 grams, this knife balances precision and ease of use well.
HADO · Sakai, Osaka
HADO was started in 2019 by Fukui Co. in Sakai. The team is six craftsmen who do almost everything themselves: sharpening, polishing and fitting handles, with blades forged by Sakai smiths such as Yoshikazu Tanaka and Shogo Yamatsuka.

About the knife type: Gyuto (chef's knife)
A gyuto is a Japanese chef's knife for all everyday kitchen work. It is similar to a Western chef's knife, but is often lighter with a thinner blade.
The profile is long and even with a pointed tip. It slices, chops and minces fish, meat and vegetables. The length lets you slice in a single cut and keep the fibres intact.
About the steel: R2/SG2
Care and maintenance
Wash by hand in warm water, and dry it straight away.
Never the dishwasher. Use a cutting board of wood or plastic, not glass or stone.
