Description

The Tsunehisa A10 Damascus Gyuto 210 mm is the chef's knife we recommend most often to home cooks. 210 mm is long enough for roasts, cabbage and whole onions, and still easy to steer on an ordinary chopping board.

The blade is AUS10 steel hardened to 59–60 HRC. It holds its edge for a long time and is easy to sharpen again. The Damascus pattern is a layer on the outside of the core. The core does the cutting, the pattern is for looking at.

Western wooden handle, 160 grams, sharpened 50/50 so it suits both right- and left-handed use. Arrives sharp out of the box.

When it goes dull, we sharpen it in the workshop in Trondheim. By post or in the shop.

Made by

Tsunehisa · Tosa, Seki og Sakai, Japan

Tsunehisa gathers knives from several of Japan's knife regions. The idea is simple: each region has its own steel and its own way of making a knife.

About the knife type: Gyuto (chef's knife)

A gyuto is a Japanese chef's knife for all everyday kitchen work. It is similar to a Western chef's knife, but is often lighter with a thinner blade.

The profile is long and even with a pointed tip. It slices, chops and minces fish, meat and vegetables. The length lets you slice in a single cut and keep the fibres intact.
