Description
Nigara Hamono in Hirosaki has forged blades since the 1600s. This 210 mm kiritsuke gyuto has an SG2 powder steel core clad in stainless steel with a kurouchi and tsuchime finish, and an ironwood handle. The angled kiritsuke tip gives extra precision in fine cuts, and the SG2 steel gives very high hardness and long edge retention.
Nigara Hamono · Hirosaki, Aomori
Nigara Hamono is a 350-year-old family business that originally made swords and knives for the Tsuguru clan. The line has continued through eight generations to the present day.

About the knife type: Gyuto (chef's knife)
A gyuto is a Japanese chef's knife for all everyday kitchen work. It is similar to a Western chef's knife, but is often lighter with a thinner blade.
The profile is long and even with a pointed tip. It slices, chops and minces fish, meat and vegetables. The length lets you slice in a single cut and keep the fibres intact.
About the steel: R2/SG2
Care and maintenance
