Description

This is a Japanese chef's knife that combines traditional craft with modern performance. It is made from Böhler N685 stainless steel, known for its durability, sharpness and high corrosion resistance. The blade is forged with 45 layers to create a Damascus pattern, and has a hardness of about HRC 61–62, which gives long-lasting sharpness.

The knife is light and thin, which makes it well suited to precise, quick cuts.

About the knife type: Gyuto (chef's knife)

A gyuto is a Japanese chef's knife for all everyday kitchen work. It is similar to a Western chef's knife, but is often lighter with a thinner blade.

The profile is long and even with a pointed tip. It slices, chops and minces fish, meat and vegetables. The length lets you slice in a single cut and keep the fibres intact.
