Description

The Chromax range from Hatsukokoro has a core of Chromax steel (64–65 HRC) clad in stainless steel, which gives very high sharpness, long edge retention and little maintenance. This 210 mm gyuto is a versatile chef's knife for daily use, and the olive wood handle gives a warm, good grip.

About the knife type: Gyuto (chef's knife)

A gyuto is a Japanese chef's knife for all everyday kitchen work. It is similar to a Western chef's knife, but is often lighter with a thinner blade.

The profile is long and even with a pointed tip. It slices, chops and minces fish, meat and vegetables. The length lets you slice in a single cut and keep the fibres intact.

About the steel: Chromax

Chromax is developed specifically for kitchen knives, and is very hard. Such a hard metal gives the knife very good wear resistance. Chromax is much less prone to oxidation than carbon steel, and so stays sharp longer. If the knife is exposed to acid, a 'patina' will form on the knife.

Wash by hand in warm water, and dry it straight away.

Never the dishwasher. Use a cutting board of wood or plastic, not glass or stone.
