Description

NIGARA HAMONO "Anmon" Raindrop Damascus series is made of SG2 powder steel. It is a type of stainless steel that can be hardened up to 65 HRC. This makes the knife very sharp straight out of the box. The handle is one of the wildest we have seen, in stabilised birch with epoxy, which makes it more durable and waterproof.

About the knife type: Sujihiki (slicer)

A sujihiki is a Japanese slicer for thin slices of meat and fish, widely used in sushi restaurants and professional kitchens. The blade is long and narrow. The pointed tip enters the piece easily, and the long edge cuts through in one stroke without tearing the fibres.

About the steel: R2/SG2

A high-quality powder metallurgy stainless steel with high carbon and alloy content. Gives sharpness, wear resistance and corrosion resistance. Clean and dry after use; avoid long exposure to moisture. Does not develop a patina.

Hardness 64-65 HRC · Care: easy care. HRC is the hardness of the steel: harder holds the edge longer, softer is easier to sharpen.
