Description

A long Japanese kitchen knife made for precise slicing of meat and fish. With its narrow, sharp blade, the sujihiki gives clean, smooth cuts without tearing the food.

The 240 mm sujihiki is a specialised slicing and carving knife, well suited to cutting thin slices of meat, sashimi or larger pieces. The 240 mm blade lets you cut in one even stroke, which keeps texture and flavour better than shorter knives. The light, balanced design makes it easy to control, even on demanding tasks.

About the knife type: Sujihiki (slicer)

A sujihiki is a Japanese slicer for thin slices of meat and fish, widely used in sushi restaurants and professional kitchens. The blade is long and narrow. The pointed tip enters the piece easily, and the long edge cuts through in one stroke without tearing the fibres.

About the steel: TUS

TUS, or Takayuki special steel, is a molybdenum and vanadium based stainless steel. It is slightly softer, so it is less likely to chip, but in return it needs sharpening a little more often.
