Description

This is a Japanese kitchen knife that combines traditional craft with modern performance. It is made of Böhler N685 stainless steel, known for its durability, sharpness and strong resistance to corrosion. The blade is forged with 45 layers to create a Damascus pattern, and has a hardness of about HRC 61–62, which gives lasting sharpness.

The knife is light and thin, which makes it well suited to precise, quick cuts.
