Description

Yanagiba of 300 mm from Sakai Takayuki. The yanagiba is the long single-bevel knife for sashimi and fish for sushi, and 300 mm gives long cuts in one stroke.

The blade is Ginsan (Silver #3), a stainless steel, mirror-polished. It is sharpened on one side and made for right-handed use. The handle is Japanese (wa) in ebony with buffalo horn.

Ginsan is easy to care for. Wipe the blade with a soft cloth after use and the mirror polish will last. Sakai Takayuki is made by Aoki Hamono in Sakai. We sharpen it in the workshop when it needs it.

About the knife type: Yanagiba (slicer)

A yanagiba is a single-bevel knife made for slicing raw fish or meat into clean slices. With its long, thin blade, it is traditionally used by sushi chefs to keep the fibres and texture of the fish intact. Slice in one smooth movement to avoid sawing the food.

When sharpening a yanagiba, sharpen at a higher angle on one side and a zero angle on the flat side.

About the steel: Ginsan (Silver #3)

A stainless carbon steel with 14% chromium, combining the properties of carbon steel with stain resistance. Gives good sharpness and is easy to sharpen, whilst needing less maintenance than traditional carbon steels. Clean and dry after use; avoid long exposure to moisture. Resistant to patina.
