Description

Grand Chef is Sakai Takayuki's professional workhorse. The knife is very ergonomic, with a medium-stiff flex and a polished spine that suits filleting and trimming fish.

The blade is one piece of Swedish stainless steel from Böhler-Uddeholm with a very low level of impurities, hardened to around 60 HRC for long edge retention and easy care. The flexible 240 mm blade follows the backbone and skin without forcing the cut, and it is double-bevel, so it suits both right- and left-handed use. The POM resin handle is hygienic and stands up to hard use in a busy kitchen.
