Description

Nakiri (vegetable knife) of 165 mm from HADO in Sakai, sold as HADO Factory Seconds. The knife is new from the forge, with a cosmetic flaw. Ask us about the flaw on this particular knife.

Nakiri has a straight, wide blade with no tip, for cabbage, onion and root vegetables. The core is Shirogami 2 (White #2), a carbon steel, with iron cladding and kurouchi. The handle is Japanese (wa) in dark oak, and the edge is sharpened 50/50.

The iron cladding can rust. Dry the knife straight after use. We sharpen it in the workshop when it needs it.

About the knife type: Nakiri (vegetable knife)

A nakiri is a vegetable knife with a short, straight, wide blade and no tip. It gives fine, even cuts when you chop, slice and julienne.

A nakiri is not a cleaver. Do not chop through bone or frozen food.

About the steel: White #2 (Shirogami #2)

Similar to White #1, but with slightly lower carbon content, which makes it more forgiving in use. Easy to sharpen and holds a sharp edge well.

Clean and dry straight after use; avoid long exposure to moisture. Over time the steel develops a protective patina that improves rust resistance and gives the blade character.
