Description

Sakai Takayuki Homura Guren

Forged by the knife smith Itsuo Doi in Sakai, an area known for its long knife traditions. The Homura Guren series stands out with its raw, dark kurouchi look combined with a careful, precise finish.

The blade has a core of Aogami #2 carbon steel, which gives very good sharpness, long edge life and makes it easy to sharpen. The core steel is clad in softer iron, which gives a good balance between performance and durability in daily use.

The knives are a little heavier than many other Japanese knives, which gives a stable, controlled feel on the board. The result is a solid workhorse, as suited to precision work as to large amounts of ingredients.

A good choice for anyone who wants a classic Japanese knife with clear character, in both looks and performance.

About the steel: Blue #2 (Aogami #2)

Offers a balance between sharpness, durability and ease of sharpening. Versatile and common among professional chefs. Clean and dry straight after use; avoid long exposure to moisture. Develops a protective patina over time that reduces the risk of rust and gives the blade its own look.
