Description

HADO Shiosai Ko-Bunka 135 mm is a compact, versatile Japanese kitchen knife, well suited to precision work such as chopping, slicing and cutting smaller ingredients. The blade is forged from SG2 powder steel, known for its sharpness and durability. The hammered tsuchime finish gives the knife a distinctive look and reduces the tendency of food to stick to the blade. The stabilised wood handle gives a comfortable, secure grip and adds to the knife's clean design. With a blade length of 135 mm and a weight of 104 grams, this knife offers a good balance between precision and ease of use,

About the knife type: Bunka (chef's knife)

A bunka is similar to a santoku, but has a sharper, angled tip. It chops vegetables, slices meat and fillets fish.

The tip is good for fine work, but can break more easily, so the knife needs more experience and precision.

About the steel: R2/SG2

A high-quality powder metallurgy stainless steel with high carbon and alloy content. Gives sharpness, wear resistance and corrosion resistance. Clean and dry after use; avoid long exposure to moisture. Does not develop a patina.
