Description

HADO Shiosai Bunka 180 mm is a high-quality Japanese kitchen knife, known for its versatility and precision. The blade is forged from SG2 steel, a powder-metallurgy stainless steel that gives very good sharpness and durability. The hammered tsuchime finish looks good and also helps reduce food sticking to the blade. The handle is made of stabilised wood, which gives a distinctive look and better resistance to moisture. With a blade length of 180 mm and an overall length of 316 mm, the knife gives a good balance between precision and ease of use.

About the knife type: Bunka (chef's knife)

A bunka is similar to a santoku, but has a sharper, angled tip. It chops vegetables, slices meat and fillets fish.

The tip is good for fine work, but can break more easily, so the knife needs more experience and precision.

About the steel: R2/SG2

A high-quality powder metallurgy stainless steel with high carbon and alloy content. Gives sharpness, wear resistance and corrosion resistance. Clean and dry after use; avoid long exposure to moisture. Does not develop a patina.
