Description

This is a Japanese chef's knife that combines traditional craft with modern performance. It is made of Böhler N685 stainless steel, known for its durability, sharpness and very good resistance to corrosion. The blade is forged with 45 layers to create a Damascus pattern, and has a hardness of about 61–62 HRC, which gives a long-lasting edge.

The knife is light and thin, which makes it well suited to precise, quick cuts.

About the knife type: Santoku (chef's knife)

Santoku is a Japanese all-purpose knife. The name means 'three uses': meat, fish and vegetables.

The blade is slightly wider than on a gyuto or a Western chef's knife, so there is room for large vegetables. The tip gives the edge a larger contact surface, and the knife cuts well with a push cut.
