Description

Yanagiba of 390 mm from Sakai Takayuki, the Zangetsu model. The blade is forged honyaki, from one piece of Ginsan, mirror-polished and with a kiritsuke tip.

Yanagiba is the long, single-bevel knife for sashimi and fish for sushi. At 390 mm you cut large pieces in one stroke. The knife is sharpened on one side and made for right-handed use.

The handle is Japanese (wa) in black ebony with 925 sterling silver. Ginsan is a stainless steel. Wipe the blade with a soft cloth after use and the mirror polish stays. Sakai Takayuki is made by Aoki Hamono in Sakai. We sharpen it in the workshop when it needs it.

About the knife type: Yanagiba (slicer)

A yanagiba is a single-bevel knife made for slicing raw fish or meat into clean slices. With its long, thin blade, it is traditionally used by sushi chefs to keep the fibres and texture of the fish intact. Slice in one smooth movement to avoid sawing the food.

When sharpening a yanagiba, sharpen at a higher angle on one side and a zero angle on the flat side.

About the steel: Ginsan (Silver #3)

A stainless carbon steel with 14% chromium, combining the properties of carbon steel with stain resistance. Gives good sharpness and is easy to sharpen, whilst needing less maintenance than traditional carbon steels. Clean and dry after use; avoid long exposure to moisture. Resistant to patina.
