Description

The Kaname range is part of the Seki Magoroku brand and technically belongs to the family of 3-layer steel knives. This family, together with the whole Damascus range, is the brand's higher-quality class.

The detailed 3-layer blade with satin finish and highly polished edge completes the look of the knife and gives good function and sharpness. The knife's shape, 'kiritsuke', is known for its pointed tip, which makes it easier to make incisions and precise cuts. Kiritsuke knives are versatile in the kitchen, and the three blade sizes in the Kaname range make them a good partner for preparing demanding dishes and delicate ingredients.

About the knife type: Gyuto (chef's knife)

The kiritsuke gyuto is a Japanese chef's knife that combines features of two common knife types: the kiritsuke and the gyuto.

The kiritsuke is a single-bevel knife with a long, straight edge that narrows towards the tip. Traditionally it has been used only by sushi chefs or head chefs, because of its complex shape and demanding handling.

The gyuto, on the other hand, is a Japanese chef's knife similar to a Western chef's knife. It has a long, slim profile with a pointed tip and a thinner blade than the kiritsuke.

The kiritsuke gyuto has the look of a kiritsuke with the versatility of a gyuto.

About the steel: High-Carbon Stainless Steel

Hardness 61-62 HRC · Care: easy care. HRC is the hardness of the steel: harder holds the edge longer, softer is easier to sharpen.
