Description

Sakai Takayuki Homura Guren

Forged by the knife smith Itsuo Doi in Sakai, an area known for its long knife traditions. The Homura Guren series stands out with its rough, dark kurouchi look combined with a careful, precise finish.

The blade has a core of Aogami #2 carbon steel, which gives very good sharpness and long edge life and is easy to sharpen. The core steel is clad in softer iron, which gives a good balance between performance and durability in daily use.

The knives are a little heavier than many other Japanese knives, which gives a stable, controlled feel on the board. The result is a solid workhorse that suits precise work as well as larger amounts of ingredients.

A good choice if you want a classic Japanese knife with clear character, in both look and performance.

About the knife type: Petty (utility knife)

A petty is smaller than a chef's knife and has a narrow, pointed blade. It is easy to control when you slice, peel and trim fruit, vegetables and smaller pieces of meat and fish. It also minces onion and garlic well.

About the steel: Blue #2 (Aogami #2)

Offers a balance between sharpness, durability and ease of sharpening. Versatile and common among professional chefs. Clean and dry straight after use; avoid long exposure to moisture. Develops a protective patina over time that reduces the risk of rust and gives the blade its own look.
