Description

Sakai Takayuki Rinka Ginsan Sakimaru Takohiki 390 mm is a Japanese knife carefully forged and sharpened by skilled craftsmen in Sakai. The blade is made of Ginsan (Silver #3) steel, which gives sharpness and edge retention close to carbon steel, but with rust resistance.

The mirror-polished blade has a curved shape inspired by traditional Japanese swords. A haiku is hand-engraved on the blade: "Miru-hito-ni, mono-no aware-wo shirazureba tuki-ya konoyo-no kagami naruramu," which means: "The moon can serve as a mirror of this world, reflecting all that is fleeting on earth."

A one-of-a-kind collector's piece that can last for generations. Forged by Shogo Yamatsuka in Sakai, Osaka.

About the knife type: Takohiki

A sakimaru is a traditional Japanese knife with a straight spine and a tip that resembles a katana. It is a variant of the yanagiba and takohiki, used mainly to slice raw fish for sushi and sashimi. The long, narrow shape lets you slice through fish in one smooth movement, giving precise, clean cuts.

About the steel: Ginsan (Silver #3)

A stainless carbon steel with 14% chromium, combining the properties of carbon steel with stain resistance. Gives good sharpness and is easy to sharpen, whilst needing less maintenance than traditional carbon steels. Clean and dry after use; avoid long exposure to moisture. Resistant to patina.
